|Roadkill a l'orange|
Why waste good roadkill, when you can dine on roadkill a l'orange?
Roadkill Squirrel or Vole (with tyremarks left on), 1oz butter, 1 large orange, 100ml red wine, 100ml fresh orange juice, 50 ml squirrel stock, 1 tbs of honey.
Zest the orange skin and set aside the thin strips of peel. Clean the roadkill and remove any excess rubber or license plates. Season with salt and pepper. Heat the butter in a frying pan. Place the roadkill in a pan and brown nicely (2 to 3 minutes). Once browned place on a plate and cover in tin foil. Spoon out the roadkill juices, add the red wine, orange juice, squirrel stock, honey, orange segments. Reduce the sauce for a couple of minutes. To serve place some roadkill on each plate, pour over the orange sauce and sprinkle with orange peel.
