This Pancake Day why not try something different. A Roadkill Pancake. The great thing about roadkill is that it comes pre-flattened. There's no need to beat it or tenderise it. Just peel it off the road and stick it in a pre-greased pan. Squirrel, stoat, weasel, vole, hedgehog... they all make great pancakes.

To make the mix add 1 cup of flour, 2 eggs, 1/2 cup of milk, 1/2 cup of water, 2 tablespoons butter (melted). Whisk together the flour and the eggs, slowly adding the water and milk. Add melted butter. Beat until smooth. Spoon one portion of mix into a heated pan, and then add Roadkill.
